The chickpea (Cicer arietinum) is one of the oldest foods and herbs in the world, known since 7500 years ago. The region of Malaysia is considered to be the native land of this annual plant. Chickpea grains are an excellent food. They contain protein substances up to 30% , fat up to 7%, carotene, vitamin B1 and B6, rare selenium, lysine, flavonoids, organic acids , microelements , phosphorus compounds and are raw material for cosmetology, food and pharmaceutical industry. Roasted and ground chickpeas are used as a coffee substitute, and the flour is an ingredient in the production of pastries and various types of bread. The variety of chickpeas is great as it is grown in many countries. According to the shape, husk and grain size, chickpea varieties are grouped into two major groups: Desi - yellow, brown, green or black small , angular beans, with a coarse thick shell. Cultivated mainly in India, Mexico, Ethiopia and Iran - Kabuli - light brown, rounded, large beans with a smooth surface and a thin, delicate shell. Cultivated mainly in Europe, North Africa, Afghanistan and Chile. Usually the varieties with lighter coloured grains are used for human food , and those with darker coloured grains having a higher protein content for animal feed . However, black chickpeas are highly prized in Indian cuisine. Depending only on the size of the grains, chickpea varieties are divided into three groups: *small grains; *medium grain; *coarse-grained. Due to its rich composition, chickpeas have many different benefits for human health: Improves digestion; Heals sprains and ulcers; Promotes clean and healthy skin; Affects the cardiovascular system, reducing the risk of heart attack and stroke; Helps build muscle mass; Reduces blood sugar and cholesterol; Improves metabolism and leads to weight loss. The pea (Pisum sativum L.), including the yellow pea, is an annual herbaceous spring plant of the legume family (Fabaceae, Leguminosae), known since more than 8000 years ago. Yellow peas are an indispensable crop for food and feed. It is grown for subsistence all over the world. It is valued for its high content of vegetable protein and coarse dietary fiber, contains important amino acids, various types of sugar, vitamins PP, vitamins of groups A, B, C, potassium, calcium, magnesium, phosphorus, manganese and iron, as well as starch, carotene. It is rich in macro and trace elements, an excellent source of molybdenum and has a high concentration of ascorbic acid. Yellow peas, also called field peas, are used dried instead of eaten fresh. It enjoys special attention from the people because: - helps to cope with gastrointestinal disorders - improves metabolic processes in the body; - maintains protein balance - useful in skin diseases - has diuretic properties; - antiseptic and astringent improves the work of the heart muscle; - normalizes blood pressure; - normalizes blood sugar levels; - removes stones/sand from the kidneys and urinary tract.
